Description of this Chinon
Bertrand Sourdais, the owner, travelled through the South of France and Spain before going back to Chinon. He went round the Médoc area of course and then head down to Spain. He first stopped to Priorat to make wines with Alvaro Palacios. He then went to the Ribera del Duero to manage Atauta which is more and more awarded by Parke with the wonderful Tempranillo...
His father retired from the family owned domaine in 2004. He came back to the Pallus and worked on the delicacy of the Cabernets with the "Pensées de Pallus".
The nose is slightly herby, typical from Cabernet Franc. The attack is soft and silky with a lively finale. The aromas are very complexe with liquorice and leather flavours. This wine needs to be decanted before tasting to reveal its full potential.
