Description of this Volnay 1er cru

Vineyards:
The vines are cultivated without pesticides or insecticides, and the only contribution of fertilizer occurs naturally. The soil is worked without herbicide to keep its airing and its flexibility.
Winemaking:
Wine harvest by hand, selected in the winery, 100% scraped. Cold maceration for 7 days, control of the temperature of fermentation, fermenting for 21 days.
Gathering:
In oak barrels (30% new Oak barrels) for 15 months, natural and late malolactic fermentation, without fining or filtration, bottled by gravity.
Tasting:
The nose is open and is revealing notes of vanilla, the mouth is very complex on the aromas and very deep, well balanced wine, complex and oily.
