A difficult growing season followed by a beautiful harvest under the sun, 1997 gave a smaller harvest for Salon than 1996. 1997 excites with its impressive ripeness and a total acidity comparable to 1995.
Precisely 10 years on the lees were necessary for this vintage to grow, a peacefully effervescent rest in our cellar.
We managed to riddle this first portion of the vintage over 3 months; Salon is, as the majority of our wines of Delamotte, riddled by hand.
Disgorgement started near the end of 2007 with a lighter dosage than the past vintage, where the wine found balance.
A vintage in breach of its predecessor just as a younger sister will distinguish herself from her older brother, Salon 1997 is sensual. Its saltiness and delicate structure reminisce the House’s family tree, but with a novel charm which was not articulated by its elders born of the same decade.
