« Aut Caesar, aut nihil », "Emperor or nothing" might well be Salon's motto. Named after its founder Aimé Salon, who absolutely adored Champagne, this house champagne produces only vintage cuvées with a sterling reputation. The Chardonnay grapes come from the top quality vineyards of Mesnil sur Oger and the cuvées mature for long years in the cellars to develop their "vintage" qualities. After a dozen or so years, the Salon bottles, marked with the initial "S", are released onto the market. They epitomise elegance and finesse with pulpy fruit and sweet honeyed brioche. 1990 is chomping at the bit and as for 1985 don't hold back.
